All of our Bacon is Dry Cured the old fashioned way on the premises with no added nitrates.

We use only free range Pork which has half the fat, but keeps the rind. The bacon is hung to dry for 3 to 4 weeks and  because the bacon is dry cured it will not be as pink as commercial bacon; but equally we guarantee it will not shrink up and exude white water when cooked!
